The couple’s twins, Moroccan and Monroe, feature in Roc and Roe's Twelve Days of Christmas, which has been illustrated by the acclaimed New York Times artist AG Ford.
Scholastic has confirmed it is publishing the picture book, which is set to hit shelves in autumn this year.
Ken Geist, vice-president, described Carey's debut as "an adorable spin on a classic tale, sprinkled with humour and heart".
Released in 1994, "All I Want for Christmas Is You" has established Carey as an icon of the holiday season.
