Dating back to the early 19th century, the Hunter Valley is one of Australia's oldest wine regions. Hunter's heart lies in Pokolbin, the location of this luxury guesthouse where the eight suites are decorated in earthy hues that complement the scene outside. Thoughtful touches include fireplaces and a welcome bottle of local fizz. The on-site Restaurant Botanica has won a clutch of awards for both its modern menu and wine list.

Wine-growing in the Margaret River region was developed in the 1960s, when Diana and Kevin Cullen planted their first vines that are now completely organic. Accommodation is based at the granite and timber homestead.
