This grand hotel, which opened in March, is housed in a renovated 19th-century neoclassical mansion, in the heart of the capital's old town. Situated on Sant Francesc Square, it takes its name from the neighbouring basilica and monastery. Many of the old features have been restored, including the wood-beamed ceilings and original frescos. Bedrooms have natural colour schemes, and some come with balconies, while suites have heavy standalone baths. The rooftop features a covered patio and an open-air pool, both with views over the city. The Sant Francesc Suite is the most impressive room, however, with a double-height ceiling adorned with colourful frescos.

Son Brull, Pollença
Located in the foothills of Serra de Tramuntana, this 18th-century Jesuit monastery has been converted into a five-star hotel. The old stone building, which has plants creeping up its walls, conceals an expansive inner courtyard from which the rest of the hotel branches off. Inside, the furnishings are modern, with crisp white walls and furniture to match. There are several dining options, including a tapas bar in an old olive press and a more formal restaurant with tables on the terrace.

L'Avenida, Soller
A former merchant's mansion, this boutique hotel is tucked away in the little town of Soller. The bedrooms are replete with canopy beds, feature walls, sheepskin rugs, silk curtains and hardwood floors. The hotel also features a courtyard garden, complete with a large swimming pool, sun loungers and linen-covered couches. Light meals are served here, but a concierge is on hand to recommend the best local restaurants.

Hotel Son Esteve, Andratx
A rural escape with a Japanese-inspired twist, this hotel is more than a little bit stylish. Inside its rustic stone exterior are glass walls, wooden slatted ceilings and outdoor showers set on private terraces. The rooms are simple: stone floors, cast iron beds. But the suites, converted from an old outhouse in 2009, are fresh and modern. The Asian-style beds are low, and the suites come with Japanese bathtubs. The beaches of the south-west are a short drive away.

Hotel Can Simoneta, Capdepera
This adults-only hotel is the perfect option for a romantic getaway. The resort comprises two buildings – the first is perched on a cliff top, while the second, a beach house, is located metres from the shoreline of the east coast. The interiors are chic and simple, with four-poster beds draped in white curtains. The suite comes with a private terrace and a Jacuzzi and the beach house has its own pool.

Gran Hotel Son Net, Puigpunyent
With its own vineyard, this hotel offers a classic taste of Mallorca. The Son Net estate dates back to 1672, with guests now accommodated in the former family mansion. Its history is worn proudly: stone columns, flagstone floors and wood-beamed ceilings. The bedrooms come with four-poster beds and marble bathrooms. The hotel's pool is surrounded by topiary, set against the surrounding mountainscape.
