Today is pancake day - an excuse to eat as many pancakes as you like without having to feel guilty.

Not only are these pancakes perfect for the domestically challenged, they also won't break the bank. In fact, you can buy all the ingredients for less than a fiver and you'll probably have most things in the cupboard already.

Whether you like a plain old pancake or you want to jazz it up with lemon juice, cinnamon or vanilla, this is the perfect recipe.

Plus, it takes 10 minutes from cracking the eggs to putting the fork in your mouth!

Batter ingredients, for 10 large pancakes:

  • 110 grams of sifted plain flour
  • Pinch of salt
  • 2 eggs
  • 200 ml milk
  • 75 ml water
  • 50g butter

Mix it all together vigorously with a whisk and you're sorted!

Add a small amount of the straight to a hot pan with a little melted butter, and you have pancakes, around 10 large ones to be precise. Make sure the batter is spread evenly across the pan, and cook it until it darkens a little. Once one side is done, flip it and cook the other side.

Add whatever you fancy - I love lemon juice and sugar, but golden syrup, fruit or even ice cream work just as well - and you're in food heaven!
