The 21-year-old wing enjoyed a phenomenal first full season in Super League, piling up 402 points in all matches in 2011 to become the leading scorer.
"I'm really happy to re-sign with my home-town club for a further two seasons," said Foster, who has scored 574 points in 48 games since making his senior debut against Toulouse in the Challenge Cup in 2010.
"I've benefited a lot from the first-team experience that I've gained in my first two seasons in Super League, which has involved me in two Grand Finals already. There's a lot of competition for places in the first team this season and the squad is raring to get playing in our new ground, Langtree Park."
His coach Royce Simmons said: "Jamie is one of the best goal kickers in the world. He already has a great amount of first-team experience for a 21-year-old and this new deal gives him the opportunity to continue his progress."
Australian utility back Jamie Simpson, 25, released by Huddersfield just 12 months into a three-year contract, has joined Brisbane club Easts Tigers, a feeder club for Melbourne Storm, for 2012.
Easts coach Troy McCarthy said: "He's trying to find his feet to get back in the NRL again and he's seen our affiliation with the Storm as a good opportunity to do that."
