No reason has been given by the club for ending the 28-year-old’s deal, which was due to expire next summer.
Mendez-Laing joined from Rochdale in 2017 under Neil Warnock on a free transfer.
In total, Mendez-Laing played 92 times for the Bluebirds, scoring 14 goals.
Notably, the former Wolves and Peterborough forward was part of the side that won promotion to the Premier League in 2018.
A club statement read: "Cardiff City Football Club has, with immediate effect, terminated the contract of Nathaniel Mendez-Laing.
"The club will not be making any further comment on the matter."
Neil Harris had previously revealed the player was not involved in pre-season for “personal reasons”.
While the player has deleted all content on his social media accounts.
Harris' side begin their Championship campaign at home to Sheffield Wednesday on Saturday.
