The vegetarian campaigner and wife of Sir Paul McCartney, who died of cancer in April, will be honoured by 500 women at the lunch at the Savoy Hotel in London.
Guests will be offered a vegetarian meal so that they can do want she asked and "Go Veggie". Sir Paul, who is releasing a CD of his wife's music later this month, sent a message to the organisers which said she would have been "chuffed" to be involved with the Women of the Year Lunch and added: "It's a pity us blokes can't go."
Janet Hull, vice-chair of the event, said Lady McCartney's life summed up what the assembly represents.
