Kris Cook, 36, suffered a sudden heart attack in Guildford on Sunday, during the race.
He collapsed at Newlands Corner in Guildford and received medical treatment from the event's doctors at the scene, but was pronounced dead at hospital.
Mr Cook had been one of a group of 12 cyclists to take part in the Prudential Ride London over the weekend. They were raising money for Working Hospice.
Tributes have poured in to Mr Cook’s JustGiving page, with friends and fellow riders giving donations and messages of condolence.
“May the sun now always shine for you Kris, and the wind now always be at your back,” one friend wrote, alongside messages of “Bless you Kris” and “So very very sad”.
Mr Cook’s page has now raised more than £4,485, hugely beating is original target of £500.
In the story section of the page, Mr Cook had written: “I have never taken on a challenge such as this.
“The training has just started and I think it is going to be taking up quite a bit of time over the coming months.”
According to the event’s organisers, Mr Cook’s mother said he “died doing something he loved,” and welcomed any donations people wish to make to her son’s page.
A spokeswoman for Prudential RideLondon said: “Kris Cook, aged 36, collapsed at Newlands Corner from a sudden cardiac arrest and, although prompt medical attention was provided by event doctors at the scene, his death was later confirmed after further attempts to revive him at hospital.”
“The organisers of the Prudential RideLondon-Surrey 100 would like to express their sincere condolences to Kris’s family and friends.”
The Mayor of London’s annual cycling festival saw more than 600 cyclists taking a 10 mile ride through the capital on Saturday, before 20,000 people completed a 100 mile race from London to Surrey and back again on Sunday.
This weekend’s race was cut short to 86 miles however, after it was hit by strong winds and torrential rains, the organisers said.
There will be a post mortem carried out to establish the cause of death of Mr Cook.
