6 large tomatoes, peeled and cut into large dice
2 small cucumbers, peeled and cut into large dice
2 large sweet red onions, cut into very small dice
3-4 tbsp coarsely chopped fresh flat leaf parsley
6 tbsp black olives, chopped
2 tbsp black olive paste
2 tbsp lemon juice
2 tbsp extra virgin olive oil

Put all the vegetables into a large bowl and mix them together gently. Mix in the parsley and then add the olives and stir again.

Make the dressing by combining the black olive paste, lemon juice and olive oil. If the mixture is too thick, add a little more olive oil, and mix thoroughly.

Pour the dressing over the salad. The juices from the vegetables should help to loosen the dressing. Mix thoroughly and serve at once with a crusty bread.
