Ready in 25 minutes
Serves 4
454g British pork sausages (8 pack)
400g new potatoes, diced
400g chopped tomatoes
390g can ratatouille provencale
1 x ½ 25g pack fresh flat leaf parsley, chopped
Place the sausages under a preheated grill for 15 minutes, turning occasionally. Cut into thick slices once cooked.
Meanwhile, cook the potatoes in boiling water for 10 minutes until tender, drain and return to the pan, add the tomatoes and ratatouille and simmer for 5 minutes.
Stir in the sausages and cook for 2–3 minutes. Sprinkle over the parsley and serve.
