Chambord is a French raspberry liqueur with a hint of honey. It is great for making cocktails with less alcohol, perfect for lazy afternoons. If no Chambord is available, a good quality cassis makes an adequate substitute, and for the kids a brilliant, non-alcoholic version can be made with Ribena.

50ml Chambord
¾ of a lemon cut into halved wedges
8 raspberries
Soda water

Muddle the lemon wedges in the base of a large highball glass. Add the Chambord, raspberries and a cup of crushed ice, lightly churn and then fill the glass with crushed ice and soda. Garnish with raspberries and a lemon wedge.
