This is exactly the sort of quick and easy dish I love to make before curling up on the sofa to watch television. It's really quite healthy for a TV dinner. Although I know it's basically a cheese toastie, it has an Italian flavour and underneath there's much more to it.

I hope sharing it can help Leukaemia Research. The charity's putting together a book of great easy recipes offered by the general public, so this is kind of getting the ball rolling. It's a cause I particularly care about - I lost someone close to me to non-Hodgkin's lymphoma and it made me aware of the devastating effects of blood cancers and lymphomas, and of the fantastic work carried out by Leukaemia Research.

1 large loaf of sun- dried tomato and olive oil ciabatta
1 red pepper
4 slices of Parma ham
2 plum tomatoes, sliced
50g cheddar cheese, sliced
A few fresh-picked basil leaves
2tsp balsamic vinegar

Slice the ciabatta in half, lengthways through the middle. Grill the red pepper until the skin has blackened, then remove the skin. (Or simply buy ready- prepared in a jar!)

Layer the peeled red peppers, Parma ham, plum tomatoes and slices of cheddar on to the cut halves of ciabatta. Place under a medium grill for 3-5 minutes, until the cheese is melted.

Scatter over the basil leaves, add a splash of balsamic vinegar, and serve.
