for the pancakes

100g plain flour
A pinch of salt
1 egg
1/2 pint (300ml) milk
Some sunflower oil

for the filling

1/2 an onion, chopped
2 cloves of garlic, chopped
1/2 a yellow pepper, chopped
1 tin of tuna, drained
1 handful of sweetcorn
1 tin plum tomatoes
1 large squeeze of tomato purée
Olive oil for frying
A drizzle of honey

Fry the onion and garlic in the olive oil until soft but not coloured. Add the yellow pepper, followed by the tuna, then the sweetcorn. After a couple of minutes, add the tomatoes and purée and reduce it down for 15 minutes. And of course, don't forget the honey just before the end.

Meanwhile, put the flour in a bowl, add the salt and egg and half the milk, then beat it. Add the rest of the milk a little at a time, beating it all the while, until it's thickish but runny.

In a different pan, add the oil, then a big spoon of the pancake mix. When it starts to set, flip over and give it another couple of minutes. Pop it out on to a plate, put some filling in, and wrap it up.
