Celebrity square meals #21: Anne Diamond's special tuna salad
Your support helps us to tell the story
From reproductive rights to climate change to Big Tech, The Independent is on the ground when the story is developing. Whether it's investigating the financials of Elon Musk's pro-Trump PAC or producing our latest documentary, 'The A Word', which shines a light on the American women fighting for reproductive rights, we know how important it is to parse out the facts from the messaging.
At such a critical moment in US history, we need reporters on the ground. Your donation allows us to keep sending journalists to speak to both sides of the story.
The Independent is trusted by Americans across the entire political spectrum. And unlike many other quality news outlets, we choose not to lock Americans out of our reporting and analysis with paywalls. We believe quality journalism should be available to everyone, paid for by those who can afford it.
Your support makes all the difference.I've become a bit of a tuna-holic recently. I don't know what I'd eat without it. I'm a veggie and have been for about 15 years and it's murder to think of veggie recipes when you're trying to lose weight. Tuna is good in many ways - it's nutritious, it has all the omega 3 oils you're meant to have and it's also very filling. From that point of view it's better than salmon which is much lighter. It's been really useful in my weight-loss regime. It's more for me, but I do make it for the family; they quite like it now. They'd have it with new potatoes or something. It's incredibly healthy, it fits into any sort of diet quiet well. Plus it's really delicious.

Ingredients
8-10oz tuna steak
1tbsp of olive oil
1¿2tbsp of black pepper corns (coarsely crushed between two spoons)
1¿2tbsp of coriander seeds (again coarsely crushed)
1¿2tbsp of balsamic vinegar - I don't know what I'd do without it
A big handful of rocket leaves
Six cherry tomatoes halved
Some chopped chives
Brush the tuna with olive oil. Mix the crushed peppercorns and coriander and roll the tuna in the mixture until it's thoroughly coated and then wrap in foil. Heat a frying pan until it's piping hot. Lay the foil-wrapped tuna in the pan and (keep the heat high) cook for 10 minutes (or you could put it in the oven). Take the tuna out of the pan and leave it to cool.
Whisk the balsamic vinegar with the rest of the olive oil and with a pinch of pepper and salt to make your salad dressing.
Arrange the rocket leaves and the tomatoes on a plate and drizzle the dressing over. Scatter the chopped chives and unwrap the tuna and lay it on top of the salad. And that's it. It's quick and easy - and really tasty, too.
