Easy Bacon Macaroni Salad

Serves 4

Comfort food can please your wallet as well as your belly. This savoury spin on a lunch classic will leave your taste buds bacon for more.

300g elbow macaroni

75g chopped red bell pepper

75g diced real bacon bits

2 tbsp chopped onion

30g chopped cilantro

75g cup chopped celery

1 tbsp Dijon mustard

75g mayonnaise

A pinch of salt and pepper

In a medium size pot, bring water to a boil. Cook the elbow macaroni until al dente. After straining, add the pasta to a large bowl and combine with red pepper, bacon, onion, cilantro, celery, Dijon mustard, mayonnaise, salt, and pepper. With a large serving spoon, gently toss your salad. Divvy up into four containers and serve chilled. Don’t mind your colleagues’ hungry eyes.
