“When it gets cold outside, that’s when you want to be around your cooker – a live fire,” said the broadcast personality who cooked up a storm when he caught Jamie Oliver’s eye and was swiftly signed up to present on Oliver’s YouTube television channel Food Tube.
In this video, BAFTA Award-winning DJ BBQ kicks off a four-part video series in which he shares some of the most mouth-watering recipes from his Finding Grilltopia journey with Hellmann’s where he was sent around the world to convince four non-grillers that food cooked over fire is the future.
He starts the series with his Fish tacos with a tropical sauce to bring that touch of summer.
“Fish tacos sit in my top three favourite foods of all time, but this just takes it another level with a lovely tropical salsa,” he said.
“Gorgeous fruit flavours with the heat from the peppers. That’s a great way of eating healthy, getting your fruit, getting your proteins and bringing flavour to the party.”
In the next video, DJ BBQ (aided by Hank, his trusty olive oil pourer) makes Memphis style ribs. He’s talking dry rub, Szechuan mopping sauce and finishing off with a smoky BBQ sauce.
